khir ek prakar ka mishthann hai jise chaval ko doodh mean pakakar banaya jata hai. khir ko payas bhi kaha jata hai. 'khir' shabd, 'kshir' (= doodh) ka apabhransh roop hai.

- 1 litar shuddh doodh
- 50-60 gram apaka manapasand chaval achchhi prakar se dhula tatha pani nithara hua
- 2-3 ilayachi chhilata nikal kar pisi huee
- 2 chammach badam lanbe akar mean katara hua
- chutaki bhar kesar tho di matra ke garm doodh mean ghola gaya
- 1 chammach pishta katara hua
- shakkar svadanusar

- doodh ko ek mote tale vali bhagoni ya patili mean dal kar ubalean. ek ubal ane par usamean chaval dal dean aur ag dhimi kar dean. bich-bich mean karachhul se chalate rahean taki doodh patili ke tali mean lagakar jale nahian.
- chaval ke poori tarah se pak jane par usamean shesh samagri dal dean aur chamacha se chala kar sabhi samagri ko achchhi tarah se mila dean.
- garamagaram ya thanda karake parasane ke lie khir taiyar hai.
- ap chahean to apani pasand ke any sookhe meve jaise ki kajoo, kishamish adi bhi dal sakate haian kintu kishamish to tel ya ghi mean talane ke bad hi dalean taki usaki khatas se khir kharab n hone pae.
