dahi bada banate samay jis samagri ki avashyakata hoti hai, vah is prakar hai-

  1. dhuli udad ki dal - 250 gram
  2. dahi - 1 kilogram
  3. namak - svadanusar
  4. hing - 1-2 chhote tukade
  5. kajoo - 1 chammach (chhote tukadon men kata hua)
  6. kishamish - 1 chammach
  7. bhuna hua jira - 1 chammach
  8. lal mirch paudar - 1 chhoti chammach
  9. riphaind tel - avashyakatanusar

banane ki vidhi

  • sabase pahale dhuli udad ki dal ko dhokar do ghnte ke liye pani men bhigo dena chahie. yadi dal ko rat men hi bhigokar rakh diya jaye, to bahut achchha rahata hai. ab dal men se pani nikal dijiye aur halki si daradari pis lijiye.
  • dal ko ek bartan men lekar aur ek chammach pani men hing gholakar dal men achchhi prakar se mila den. dal ko ek chothaee chhoti chammach namak milakar achchhi tarah dal naram hone tak mila lijiye.
  • ab ek kadhaee men dahi bade talane ke liye tel daliye aur garam kijiye. ek chhoti katori lijiye aur us par ek saf dhula hua kapada dhakakar pichhe ki or se pakad lijiye. kapade par hath se thoda-sa pani lagaiye. ab ungaliyon ke sahare se thodi-si dal nikaliye aur kapade ke oopar rakhiye.
  • dal ke oopar bich men 2 kajoo ke tukade aur ek kishamish daliye. ab kishamish, kajoo adi ko charo or se dal men daba dijiye. dahi bade ko ungaliyon se dabakar chapata aur gol kar lijiye. halke hath se use kapade se hatakar kadaee men talane ke liye daliye.
  • 4 ya 5 dahi bade ek bar men taliye. jab dahi bade bhoore rng ke se ho jaen, tab unhen kadaee se nikalakar plet men rakh dijie. sare dahi bade isi tarah se talakar taiyar kar lijiye.
  • isake bad ek baratan men ek litar saf pani lijiye aur halka garam kar lijie. isamen adha chhoti chammach namak mila dijiye. ab sare dahi bade namakin pani men dal dijiye. tale hue dahi badon ko khane se adha ghnta pahale pani men bhigona chahie.
  • adha ghnte bad dahi bade pani men bhigakar naram ho jayenge. ab ek dahi bada pani se nikaliye aur hatheli se dabakar adhik pani ko nikal den aur doosare bartan men rakh dijiye. isake bad dahi ko achchhi tarah se math lijiye aur adha chammach namak mila lijiye. dahi ko badon ke oopar achchhi prakar se dal dijiye aur bhuna hua jira chhidak dijiye. lal mirch (yadi ap pasand karate hon) to vah bhi chhidak dijiye.
  • ab dahi bade poori tarah se taiyar hain aur hare dhaniye se sajakar inhen parosana chahie.
