gujhiya athava 'gujiya' ya 'gunjiya' ek prakar ka pakavan hai jo maida aur khoe se milakar banaya jata hai. ise chhattisagadh rajy men kusali, maharashtr men karnji, bihar men pidaki, andhr pradesh men kajjikayalu kahate hain. uttar bharat men holi tatha dakshin bharat men dipavali ke avasar par ghar men gujhiya banane ki parnpara hai.

banane ki vidhi

gujhiya mukhy roop se do tarah se banaee jatin hai, ek- mava bhari gujhiya, doosari rava bhari gujhiya. mava ilayachi bhari gujhiya ke oopar chini ki ek parat chadhakar vark lagakar isako ek naya roop bhi dete hain. mava ke sath kabhi kabhi hara chana, meva ya doosare khady padarth milakar, jaise anjir ya khajoor ki gujhiya bhi banaee jati hain.

  1. mava - 400 gram
  2. sooji - 100 gram
  3. ghi - 2 chammach
  4. chini - 400 gram
  5. kajoo - 100 gram (ek kajoo ko 5-6 tukade karate huye kat lijiye)
  6. kishamish - 50 gram (dnthal hon to, tod dijiye)
  7. chhoti ilaichi - 7-8 (chhil kar koot lijiye)
  8. nariyal - 100 gram (1 kap kaddookas kiya hua)[1]
gujhiya ka ata taiyar karane ke liye
  • maida - 500 gram
  • doodh ya dahi - 50 gram
  • ghi - 125 gram (2/3 kap )
  • ghi - gujhiya talane ke liye

kasar

bhari tale ki kadhaee men mava ko halka bhoora hone tak bhooniye aur ek bartan men nikal lijiye. kadhaee men ghi dal kar, sooji daliye, halka bhoora bhoon kar, ek plet men nikal lijiye. chini ko pis lijiye. sookhe meve kate huye taiyar hain. mava, sooji, chini aur mevon ko achchhi tarah mila lijiye. gujhiyon men bharane ke liye kasar taiyar hai.[1]

vidhi

maida ko kisi bartan men chhan kar nikal lijiye. ghi pighala kar ate men dal kar, achchhi tarah milaiye. ab doodh dalakar ate men milaiye, pani ki sahayata se kada ata gooth lijiye. ate ko adha ghnte ke liye gile kapade se dhakakar rakh dijiye. ate ko kholiye aur masal masal kar mulayam kijiye. ate se chhoti chhoti loee tod kar bana lijiye (itane ate se 50- 55 loiyan ban jayegi). loiyon ko gile kapade se dhakakar rakhiye, ek loee nikaliye 4 inch ke vyas men poori beliye, beli huee poori thali men rakhate jaiye. jab 10 - 12 pooriyan thali men ho jayn, ab inhen bhar kar gujhiya taiyar kar lijiye.[1]

gujhiya bharane ke tariqe
  • poori ko hath par rakhana, poori ke oopar mishran rakhana, mod kar band karana, aur gujhiya katarani se katana.
  • poori ko hath par rakhana, poori ke oopar mishran rakhana, mod kar, band karana, aur gonthana.
  • poori ko, gujhiya ke sanche ke oopar rakhana, poori ke oopar mishran rakhana, kinaron se pani lagakar, band karana, dabana.

ap tinon tariqe se gujhiya bana sakate hain, lekin tisara tariqa adhik asan hai, isamen samay bhi kam lagata hai, sath hi sari gujhiyan ek barabar hoti hain.

10 pooriyan hamane bel kar rakhi huee hain. ek poori uthaiye, poori ko sanche ke oopar rakhiye, ek ya ded chammach kasar poori ke oopar daliye, kinaron par ungali ke sahare se pani lagaiye. sanche ko band kijiye, dabaiye, gujhiya se atirikt poori hata dijiye. sanche ko kholiye, gujhiya nikal kar thali men rakhiye. ek ek karake sari puriyon ki gujhiya isi tarah bana kar thali men lagaiye, mote dhule kapade se dhakakar rakhiye. phir se 10 pooriyan beliye aur isi tarah gujhiya banaiye aur dhak dijiye. sari gujhiya isi tarah se bana kar taiyar kar lijiye, dhakakar rakh dijiye.
ab mote tale ki kadhaee men ghi dal kar garam kijiye. garam ghi men 7-8 gujhiya daliye, dhimi aur madhyam ag par halke bhoora hone tak palat palat kar tal lijiye. kadhaee se gujhiya, thali men nikaliye aur kisi daliya ya bade chaude bartan men rakhate jaiye. sari gujhiya isi tarah tal kar nikal lijiye.
